Kolkata Style Vegetable Chop

DSC_1070Ingredients:
Potato – 2 medium
Beetroot – 2 medium
Capsicum – 2 medium
Peas – 1/2 cup
Beans – 5-6
Carrot – 2-3 medium
Cabbage – 1/2 cup
Green chilli – 5-6
Chopped Onion – 1 large
Chopped Tomato – 2-3 medium
Grated ginger – 2 tbsp
Bread crumbs – 2-3 cup
Besan – 1 cup
Turmeric powder – 1 tsp
Red chilli powder – 1tsp
Chaat masala – 1 tsp
Black salt – 1/2 tsp
Salt to taste
Sugar to taste
Oil for deep frying

For Dry Masala
Whole cumin seeds – 1 tsp
Whole coriander seeds – 1 tsp
Whole black pepper – 1 tsp
Whole cardamom – 2
Whole clove – 3-4
Whole bay leaves – 2
Whole cinnamon stick – 2 inch

Method:
Dry roast all the ingredients for dry masala and grind them to a powder masala.Keep aside.

Peel and wash all the vegies and make a coarse paste with the help of chopper or food processer.(If you dont have any cut as small as you can).

Now heat some oil in a pan and saute onions till golden brown then add chopped tomato,turmeric powder,red chilli powder,chaat masala,salt,sugar cook for 5 minutes with little bit of water.Then add chopped vegetables stirr it in very well and cook till vegies cooked properly .Now add 1 tsp of dry masala and 5-6 tbsp breadcrumbs mix it well.Cook till it release oil.
Take it off from the flame and let it cool little bit.
Now add besan,water,salt,red chilli powder and chaat masala and make a thin paste out of it.

Heat oil in a kadhai for deep frying.
Now take some of the vegie mixture in your palm and give it your favourite shape then dip it into besan mix then coat it with breadcrumbs and repeat thi process again.
Make all the chops like this and deep fry them till golden brown.Take them out on tisue paper and sprinkle black salt over it.
Serve with your choice of salad and sauce.

BHAKARWADI (Marathi/Gujarati Snack)

INGREDIENTS:

All purpose Flour/Maida – 1 Cup
Besan (chick Pea Flour)- 2 Cup
Chili Powder – 1 1/2 Tbsp
Salt To Taste
Turmeric -1/4 tsp
Hing – 1/4 tsp
Fennel Seeds – 1 Tbsp
Coriander Seeds -1 Tbsp
Sesame Seeds – 1 Tbsp
Pepper Corns -1/2 Tsp
Cumin Seeds -1 Tsp
Poppy Seeds – 1 Tsp
Sugar – 1/2 Tsp
Coconut – 1 Tsp
Amchur Powder- 1/2 Tsp
Oil For Deep Fry

METHOD:
Take a bowl add besan flour,flour, oil, hing, turmeric, salt, chilli powder, crumble the mixture before adding water. Take besan mixture add water and knead it like a stiff dough, rest it for 10 minutes.
Take blender, in this add fennel seeds, cumin seeds, pepper corns, coriander seeds, sesame seeds, poppy seeds, sugar,salt, hing, chili powder,Turmeric pwd, amchur powder, coconut and 1 tbsp of besan, blend all together make a coarse powder,take it into a bowl.
Roll the dough into thin sheet and spread the masala on top and roll the dough in to tight and seal the edge by applying water and rest it for 3 to 4 minutes, then cut them into roundels and deep fry them.
Serve them with your choice of chutney.

Fried Battered Frankfurt (Sausage)

INGREDIENTS:
Frankfurts (Sausages) – 4
All purpose flour – 1/2 cup
Rice flour – 1/2 cup
Paprika – 1 tsp
Garlic powder – 1/2 tsp
Onion powder – 1/2 tsp
Baking powder – 1 tsp
Sugar – 1/3 tsp
Water
Salt to taste
Oil
Wooden sticks – 4

METHOD:
Take bowl and mix all the ingredients except Frankfurts and make a thick very paste with the help of water.
Heat oil for deep frying in a pan.
Now take the frankfurts one by one and arrange it on the wooden sticks and cover it with the paste. Then, deep fry it till golden brown over a medium heat.
Take out on kitchen towel or tissues.
Serve hot with tomato ketchup and English mustard.

Aloor Chop

INGREDIENTS:
Boiled smashed potatoes(90% done) – 2 cups
Chopped onion – 1 medium
Chopped green chili – 3
Chopped ginger – 1 tsp
Chopped garlic – 2 tsp
Chopped coriander leaves – 2 tbsp
Turmeric powder – 1/2 tsp
Chili powder – 1/2 tsp
Chat masala powder – 1 tsp
Coriander powder – 1/2 tsp
Lemon juice – 1 tsp
Sugar – 1/2 tsp
salt to taste
Refined oil
Besan/Gram flour – 1 cup
Baking powder – 1/2 tsp
water

METHOD:
Heat 2 tbsp oil in a pan.Add onions saute till golden brown.Add ginger,garlic and green chili fry it for 5-7 minutes.Add salt,sugar,turmeric,chili,coriander,chat masala powder and 1/3 cup of water,fry it for 7-8 minutes.
Now add smashed potatoes mix it well in the mixture cook it for 10-15 minutes.Take out in a plate when its done and let it cool.
Now take bowl add besan,1/3 tsp of turmeric,chili powder,1/4 tsp of salt,baking powder and make a thick paste with the help of water.Keep aside.
Heat oil in a pan for deep frying.Now make 1 inch thick     round patties with potato mixture.Coat every patty with besan mixture and deep fry it for 4-5 minutes each side till golden color.Take chops out of oil in a tissue.
Serve hot with your choice of sauce or chutney.
