Crispy Chicken with Onion and Capsicum

INGREDIENTS:
Boneless Chicken – 200 – 250 gms (cut in squares of 1.5 inches)
Onion – 2-3
Capsicum – 1-2
Green chillies – 5-6
Garlic- 6-7 cloves
Ginger – 1 inch
Tomato sauce – 2 tbsp
Red chili sauce – 2 tbsp
Vinegar – 1 tsp
Soy sauce – 1 tbsp
Cornflour – 1/2 cup
Egg – 1
Black pepper – 1 tsp
Vinegar – 1/2 tsp
Ginger – garlic paste – 1 tsp
Salt
Refined oil

Marinade the chicken with cornflour,egg,ginger-garlic paste,vinegar(1/2tsp),black pepper,salt to taste.
Keep it for 1-2 hours.
Heat some oil for frying.Fry the marinated chicken till golden brown and crispy.
Keep aside.

Cut all the vegetables as shown in the picture.

Heat some oil in a pan add sliced onions saute till golden brown.
Add chopped ginger – garlic ,slit green chili and saute it 5-6 minutes.
Add Capsicum in it cook for 5-7 minutes.Then, add the remaining onion cook for 4-5 minutes.
Add the sauce cook for 2-3 minutes.
Add the fried chicken and toss it in.Mix it really well cook for 5 minutes and serve hot.

 

 

 

Chili Paneer (Gravy)

INGREDIENTS:
250 gms – Paneer (cut in lengthwise)
1 – big Onion (cut in big squares)
1 tsp – ginger-garlic paste
1 – green capsicum (cut in square)
1 tbsp – soya sauce
1/4 tsp – white vinegar
1 tbsp – green chilli sauce
1 tbsp – red chili sauce
1 tbsp – tomato sauce
2-3 – green chillies, slit
1 tsp – black pepper powder
1/2 tsp – minced garlic
1/2 tsp – minced ginger
1 tbsp – cornflour
1 tbsp – all purpose flour
Salt to taste
Oil
METHOD:
Marinate the paneer with salt , cornflour,red chili powder,1/4 cup of water for atleast 1 hour.
Heat oil in a pan and deep fry the paneer until golden brown. Set aside.
In a pan heat some oil, add garlic and ginger saute it for 1 minute.Add the chillies and fry for 2 minutes. Next, add the onions and capsicum and fry until soft (5-8 mins). Add vinegar and mix well. Add the fried paneer and soya sauce, green chilli sauce,tomato sauce, salt.
Stir all the ingredients until well combined,
Take a bowl mix 1/2 cup of warm water and 2 tsp of cornflour,mix well.
Stir all the ingredients until well combined,
Then add 1 cup of hot water and cornflour mix,cook for another 5-10 mins on high flame,stir it continuously .serve hot.

Egg Chili Fried Rice

Boiled rice (85%) – 2 cups
Egg – 2
Chopped garlic – 1 tsp
Red chili flakes – 2 tbsp
Soya sauce – 2 tbsp
Vinegar – 1 tsp
Refined oil – 2-4 tbsp
Salt
Sugar
Method:
Heat oil in a wok add garlic saute for a minute add two eggs and make it scramble.
After eggs cooked properly add boiled rice , cili flakes,salt,sugar,vinegar,soya sauce mix it well.
Cook it on high flame for about 10 minutes and stir continuously.
After it mixed nicely cook it for more 5-10 minutes.
Serve hot with any chinese gravy dish.

Chicken with Mixed Vegetables

Ingredients
Chicken (cut in strips) – 250 gms
Chopped Ginger – 1 tsp
Chopped Garlic – 1 tsp
Onion (cut in lengthwise)- 1 small
Carrot(cut in lengthwise) – 1/2
Capsicum(cut in lengthwise) – 1/2
Baby corn (cut in lengthwise) – 2-3
Mushroom (cut in thin slices) – 2-3
Spring onion (cut in lengthwise) – 1-2
Snow peas – 3-4
French Beans (cut in lengthwise)- 2
Broccoli florets – 4-5
Egg – 1
Chilli flakes 1-2 tbsp
Sriracha / hot chilli garlic sauce – 2 tbsp
Soy sauce – 1 tbsp
Vinegar – 2- tbsp
corn flour – 4-5 tbsp
Salt to taste
Sugar – 1/3 tsp
Oil

Method:
Marinate the chicken with 1 tbsp of vinegar ,salt, 2 tbsp of cornflour ,egg and sriracha.Keep aside for 1 hour.
Take a pan heat oil for deep fry.Now fry the marinated chicken till light golden brown.keep aside.
Now,take a wok/pan heat some oil.add chopped ginger-garlic saute it for 2 minutes then,add onion,all the vegetables,mushroom,sugar,salt,
Chilli flakes saute it for 5-7 minutes or till vegetables are half cooked. Now add soy sauce,vinegar mix it well and saute it for 5-7 minutes then, add 1 cup of water bring it to boil.Now pour in the cornflour mixture..(Mix 2 tbsp of cornflour in half cup of water)
Cook for another 5-8 minutes.
Serve hot with your choice of Rice and Noodles.

Chilli Prawn Noodles

INGREDIENTS:

Thin noodles(Boiled) – 1 cup
Prawn – 1/2 cup
Chopped garlic – 1 tsp
Chilli flakes – 1-2 tsp
Sriracha or hot sauce – 3-4 tbsp
Sugar – 1/2 tsp
Salt to taste

METHOD:
Take a wok add 4 tbsp oil saute garlic for 1 minute.Add chilli flakes and prawns cook till prawns cooked thoroughly.Now add onions and sauce in it saute till golden brown.
Add in the boiled noodles mix it well in the sauce.
cook it for 5- 8 minutes sprinkle 1/2 tsp chilli flakes.
Serve hot.

Hot n Sour Soup with Shrimp

 

INGREDIENTS:
Oil – 1 Tbsp
Garlic – 1 tsp, minced
Ginger – 1 tsp, minced
Shrimps(cleaned) – 1/2 cup
Chopped Carrots – 1/2 cup
Corn kernels – 1/4 cup
Chopped Green Beans – 1/4 cup
Chopped Cabbage – 1/2 cup
Mushroom – 1/2 cup, thinly sliced
Chicken Broth/Stock – 4 cups
Beaten Egg – 2
Soy Sauce – to taste
Red Chili Sauce – to taste
Black Pepper – to taste
Vinegar – to taste
Corn Starch – 1 Tbsp, mixed with a little cold water
Chopped Spring/Green Onions -1/2 cup
Salt to taste
Sugar to taste

METHOD:
Heat Oil in a medium sized pot.Add Ginger,Garlic and shrimps saute for 1-2 minutes.Add Corn, Green Beans,Carrots and Cabbage saute for 1-2 minutes.
Add chicken Broth, Salt,sugar,Black Pepper.Bring mixture to a boil and simmer until vegetables are half done. Add Mushrooms, 1/2 of the green onions, Chili Sauce, Soy Sauce and Vinegar and bring to a boil.Mix 2-3 Tbsp water with the Corn Starch and add it to the soup bring to a boil.
Slowly add in beaten Egg and start stirring after 2 minutes and cook for 1-2 minutes.
Garnish with Spring Onion and serve hot.

To make it vegetarian don’t use shrimp and add vegetable broth or stock instead off chicken broth.
or
If you want chicken hot n sour soup simply add shredded chicken instead off shrimps.

 

Veg Spring Roll

INGREDIENTS:

For wrappers:-
Refined Flour-1/2 cup
Corn Flour – 1/2 cup
Salt-1/4 tsp
Egg – 1

For the filling:-
Cabbage(finely cut in lengthwise) – 1 cups
Carrot (finely cut in lengthwise) – 1/2 cup
Capsicum/Bell Pepper(finely cut in lengthwise)-1/2 cup
Tomato(finely cut in lengthwise)- 1/4 cup
Onion(finely cut in lengthwise)-1 small
Minced garlic-1 tbsp
Soy Sauce-1 tsp
Vinegar- 1 tsp
Black Pepper powder- 1tsp
salt to taste
sugar – 1/2 tsp

METHOD:
For wrapper:
Mix all the ingredients in a bowl and make a paste with the help of water as required.The Consistency of the batter is required as a dosa batter when its done keep it aside for 1/2 an hour.
Now take nonstick flat pan and add few drops of refined oil.Now pour 1 spatula of the batter in the pan don’t heat the pan much keep it on medium flame.When its done flip it to the other side.This wrap needs not more than 5 minutes to prepare.Now make as much you required and keep aside.
Keep 1/2 spatula batter on a bowl for pasting.

For the filling:
Take a pan heat some oil.Add onion then garlic into it and saute it for 3-4 minutes when the onion become translucent add carrot and cook it for 3-4 minutes now add bell peppers and tomato and cook it for another 5 minutes now add cabbage,salt,sugar and pepper,vinegar and soy sauce mix it well cook it for 5 minutes when the cabbage is done.take out of the heat and let it cool in a plate.
Take a deep pan and heat refined oil for deep frying. Don’t Heat much.
Now on flat surface take one wrap and place 1 1/2 tsp of the filling and first fold it from two vertical sides and then from horizontally your side now roll it towards up and apply some of the wrap paste on the side and wrap it full then keep it aside.Now make all the rolls one by one.Now fry it in the oil don’t overcrowd the pan add maximum 4 at a time fry till rolls are golden brown.
Take out of the pan and drain it on a tissue.Now serve it hot with your choice of sauce.I prefer it with hot chili sauce.

Chinese Style Chicken Strips (Pan fried)

INGREDIENTS:

Boneless Chikcen Strips-10 -15
Ginger-Garlic paste – 1tspn
Crushed black pepper – 1/2 tspn
Soya Sauce – 1tspn
Vinegar – 1tspn
Chinese seasoning – 1tspn

Oil- 2-3 tbsp
Salt to taste

METHOD:

Take a bowl add all the ingredients and give a good mix.Leave it for 1-2 hours.
Then take a pan.Add 2-3 tbsp of oil and add the marinated chicken into it fry it till its cooken perfectly.Switch off the fire.
Sprinkle some more chinese seasoning and serve hot.

Dry Chilli Chicken (indo-chinese style)

INGRIDIENTS:
500gm with bone chicken pieces,cut in medium size
1 big Onion Sliced
1 tspn ginger-garlic paste
1 green capsicum/bell pepper,cut in lengthwise
1 tbsp soya sauce
1/4 tsp white vinegar
1 tbsp green chilli sauce
1 tbsp tomato sauce
1 tsp freshly ground black pepper
5-6 green chillies, slit (used chillies that have lesser heat)
1 tspn Kashmiri chilli powder, for the red colour
1/2 tspn minced garlic
1/2 tspn ginger-garlic paste
1 tbsp cornflour
1 tbsp all purpose flour or maida
1 egg
Salt to taste
A pinch of sugar (optional)
Oil

METHOD:
Marinate the chicken in 1/2 tbsp soya sauce, egg, salt, pepper, flour, cornflour,ginger-garlic paste and half the green chilli sauce for atleast 30 mins. Leave it for an hour or two if you have the time.
Heat a shallow pan with about 1/4 cup oil and lightly fry the chicken pieces until golden brown. Set aside.
In the remaining oil, add 1/2 tspn chopped garlic and ginger garlic paste.Add the chillies and fry for 2 minutes. Next, add the onions and capsicum and fry until soft (2-3 mins). Add vinegar and mix well. Top off with the fried chicken and the remaining quantities of ingredients used to marinate (1/2 tbsp soya sauce, 1/2 tbsp green chilli sauce,tomato sauce, salt, sugar, and pepper).
Stir all the ingredients until well combined and fry for another 3-4 mins. serve hot.

MASALA EGG NOODLES

 

Ingredients:

  • 1 packet Noodles
  • 2 Medium Onion- Sliced Lengthwise
  • 3 chopped Tomato- Sliced Lengthwise
  • 3 Carrot – Sliced Lengthwise
  • 3 Green Capsicum – Sliced Lengthwise
  • 1 inch Ginger- Chopped
  • 3 – 4 Bulb Garlic- chopped
  • 4-5 Green chilli – Sliced Lengthwise
  • 1/2 tsp Red chili powder
  • 1/2 tsp Garam Masala Powder
  • 1/4 cup – Soya Sauce
  • 1/2 cup – Tomato Sauce
  • 1/2 cup – Green Chilli Sauce
  • 3-4 Tbsp- White Vinegar
  • Egg- 3-4
  • tblsp Oil

Method:

Boil the noodles as directed on the pack.
Drain them in a strainer and wash with cold water. Keep aside.
Heat oil in a nonstick pan and fry garlic, ginger, green chillies and onions until they are lightly brown.
Add Vegitables into it cook untill its 75% cooked.
Add tomatoes along with salt and masala.
Cook till tomatoes are tender.
Now add Eggs and mix it up with the mixture.
Add the noodles and stir well.
Add All Sauces and vinegar mix it well on high flame.
Cook for a while and remove the fire and serve immediately.
