Crispy Chicken with Onion and Capsicum

INGREDIENTS:
Boneless Chicken – 200 – 250 gms (cut in squares of 1.5 inches)
Onion – 2-3
Capsicum – 1-2
Green chillies – 5-6
Garlic- 6-7 cloves
Ginger – 1 inch
Tomato sauce – 2 tbsp
Red chili sauce – 2 tbsp
Vinegar – 1 tsp
Soy sauce – 1 tbsp
Cornflour – 1/2 cup
Egg – 1
Black pepper – 1 tsp
Vinegar – 1/2 tsp
Ginger – garlic paste – 1 tsp
Salt
Refined oil

Marinade the chicken with cornflour,egg,ginger-garlic paste,vinegar(1/2tsp),black pepper,salt to taste.
Keep it for 1-2 hours.
Heat some oil for frying.Fry the marinated chicken till golden brown and crispy.
Keep aside.

Cut all the vegetables as shown in the picture.

Heat some oil in a pan add sliced onions saute till golden brown.
Add chopped ginger – garlic ,slit green chili and saute it 5-6 minutes.
Add Capsicum in it cook for 5-7 minutes.Then, add the remaining onion cook for 4-5 minutes.
Add the sauce cook for 2-3 minutes.
Add the fried chicken and toss it in.Mix it really well cook for 5 minutes and serve hot.

 

 

 

Lehsuni Mirch Murg

Ingredients:
Chicken(with bone) – 500 gm
Garlic cloves – 10-15
Whole dry red chili – 5-8
Tomato – 1
Curd – 1 cup
Cream – 5 tbsp
Turmeric powder – 1/2 tsp
Kashmiri red chili powder – 1 tsp
Garam masala powder – 1 tsp
Lemon juice – 1-2 tbsp
Refined oil
Salt
Sugar

Method:
Marinate the chicken with lemon juice,garam masala,turmeric powder,red chili powder,curd,salt and keep aside for atleast 1-2 hour.
Soak whole red chilies in boiling water and keep aside for atleast 1/2 hour.
Make a paste with soaked red chilies,garlic and tomato.

In a kadhai heat some oil add the marinated chicken and saute it on medium flame.Stir occasionally.
When the chicken is half done add the chili garlic paste and sugar again cook it till the chicken is almost done.Add 1 cup of boiling water cook for another 8-10 minutes.Add cream in it cook for 5-8 minutes.
Serve it with any fried rice or pulao.

Tandoori Chicken in oven

Ingredients:

Chicken(small) – Cut in four pcs
Ginger-Garlic paste – 2 tbsp
Hung Curd – 1 cup
Lemon juice – 1 tbsp
Garam masala powder – 1 tbsp
Cumin powder – 1 tsp
Coriander powder – 1 tsp
Turmeric powder – 1/2 tsp
Refined oil – 3-4 tbsp
kashmiri red chili powder – 1 tbsp
Kasuri methi – 2 tbsp
Red food color (optional) 2-3 pinch

Method:
Make some slits on the chicken.
Take a bowl add all the ingredients and make a good mixture.
Apply it all over the chicken well and keep it in the refrigerator overnight.
Then,keep it out of the fridge 3-4 hours before cooking.
Pre-heat your oven on 200 degree then place the marinated chicken two at a time on the rack or on a baking tray.Brush it with some oil and grill it for total 20-30 minutes or cooked perfectly.
(Flip it another side and brush with oil and again grill it in the middle.)
Repeat it with remaining chicken pcs.
Serve it with some onion,chili,lemon wedges and green chutney.

Chicken Chap

Ingredients:
Chicken – Preferably whole chicken cut in 4 pcs. or cut in medium pcs
Ginger-Garlic paste – 1tbsp
Poppy seed , Kaju,Green chili paste – 2tbsp
Curd – 1 cup
Kashmiri Red chili powder – 1 tbsp
Turmeric powder – 1 tsp
Garam Masala powder – 1 tbsp
Spice mix powder – 1tsp(Recipe below)
Kewra water – 1 tbsp
Gulab jal – 1tbsp
Meetha atar – 1tbsp
Lemon juice – 1tsp
Salt
Refined oil/Mustard oil

Method:
Marinade the chicken with all the ingredients and 3-4 tbsp of refined oil.Keep aside for atleast 3-4 hours.
Then,heat 4-5 tbsp of oil in a kadhai and add the marinated chicken.Cook it for 15-20 minutes, stir occasionaly.
You’ll notice the oil separating from the mixture.
Then add 1-2 cup of hot boiling water.Cover it and cook till chicken is nicely done.
There should not be soo much of gravy.
Serve hot with Kolkata Biryani,Paratha or steamed rice.

Spice Mix Powder- Take Nutmeg,Mace,Clove,Cardamom,Cinnamon,Shah marich,Shah jeera,Star anise,Black pepper in equal quantity and grind it.

Spicy Hot Chicken Wings

Ingredients:
Chicken wings – 5-6
Egg – 1
Ginger-Garlic paste – 1tsp
Red chili powder – 1/2 tsp
Lemon juice/ vinegar – 2 tsp
Cornflour – as required
Salt to taste
Refined / vegetable Oil
Hot wings Sauce
Chili flakes

Method:
Marinate the wings with salt,egg,ginger-garlic paste,2 tbsp of oil,chili flakes,lemon juice and keep aside for atleast 2-3 hrs.
Then,heat oil for deep frying,
Coat the marinated wings with cornflour and deep fry them till golden brown.
In a small pan toss the fried wings in the hot wings sauce till nicely coated.

Hot n Saucy lollipops

Chicken Lollipops – 5-6
Lemon juice – 2 tbsp
Ginger-Garlic paste – 2 tbsp
Crushed black pepper – 1 tsp
Chilli- Garlic paste – 1 tbsp
Chopped Spring onion – 1 tbsp
Cornflour – 1 cup
Flour – 1/2 cup
Red chilli powder (Kashmiri) – 1 tsp
Salt
Oil

For the Sauce:
Finely chopped onion – 1/2 cup
Finely chopped garlic – 2-3 tbsp
Finely chopped ginger – 2-3 tbsp
Finely chopped spring onions – 1/2 cup
Finely chopped coriander and green chillies – 1/2 cup
Tomato sauce – 1/2 cup
Chilli garlic paste – 1-2 tbsp
Soya sauce – 1 tbsp
Vinegar – 1tbsp
Black pepper powder – 1-2 tsp

salt

METHOD:
Marinade the lollipops with lemon juice,Crushed black pepper,salt,chilli-garlic paste,ginger- garlic paste and keep aside.

Take a bowl mix flour,cornflour,salt,chilli-garlic paste and make a thick mixture with the help of water.
Heat oil for deep frying.
Coat the lollipops with the flour mixture and fry then on a medium heat till lollipop cooked properly and golden brown .
Keep aside.
Take pan heat some oil add giner,garlic,onion and coriander mixture.Saute it till the raw smell gone then add all sauces,slat,sugar,pepper powder cook it for 5 minutes Add fried lollipops and spring onions mix it well cook for some minutes.
Serve hot.

Rice Noodles Soup

Rice noodles – 1 pkt
Shrimp – 1 cup
Chicken Breast – 1
Butter – 1 tbsp
Mushroom – 1 cup
Capsicum – 1
Baby corn – 1/2 cup
Chopped onion – 2 tbsp
Spring onion – 2 tbsp
Sliced Carrot – 1
Chopped garlic – 1 tbsp
Chopped ginger – 1tsp
Chicken Stock – 2-4 cup
Black pepper pwd- 1 tbsp
Salt to taste
Sugar – 1tsp

Method:
Boil the rice noodles in salted water then drain and keep aside.
In a pan heat butter add chopped onion saute it for few seconds add chopped ginger and garlic.
Cook it till the raw smell gone.Now add Sliced chicken,prawn,babycorn,carrots,capsicum,mushrooms,black pepper,salt,sugar stirr it well and let it cook till everthing cooked.Then add boiled noodles mix it well cook for few minutes then add the stock and give it a mix.Cook for about 10-15 minutes.Sprinkle chopped spring onions and serve hot.

- You can replace rice noodles with any noodles.

Spicy Pepper Chicken

INGREDIENTS:
Boneless chicken(Breast pc) – 2
Egg – 1
Capsicum – 1-2
Onion – 1-2
Whole green chilies – 5-6
Coarsely ground black pepper – 1-2 tbsp
Ginger-Garlic paste – 1 tbsp
Finely chopped Ginger-Garlic – 1 tsp
Soy sauce – 2-3 tsp
lemon juice/Vinegar – 2-3 tbsp
Tomato sauce – 2-3 tbsp
Cornflour – 1/2 cup
Salt to taste
Sugar – 1/2 tsp
Refined oil

METHOD:
Cut the chicken in 3 inch long and 1/2 inch thick pieces.Marinade it with 1 tsp of soy sauce,egg,cornflour,salt to taste,ginger-garlic paste,1/2 tsp black pepper and keep it aside for at-least an hour.
Now cut capsicum and onion in thin long slices.

Heat oil for shallow frying in a pan and fry the chicken pieces till it cooked perfectly and turn golden brown in color.(Fry the chicken on a medium high flame). Keep aside.

On another pan heat 2-3 tbsp of oil and add chopped ginger-garlic saute it till the raw smell gone now saute onion and whole green chilies with it,when onion become little soft add capsicum fry it till it cooked 75%.
Now add salt,sugar,soy sauce,tomato sauce,black pepper,1/2 tsp vinegar,toss it well.
Cook for more 10 minutes and serve hot.
- You can change the amounts of ingredients as per your taste.

Bhuna Teekha Murg

INGREDIENTS:
Chicken(W/B) – 500 gms
Finely Chopped onion – 1 medium
Finely Chopped garlic – 2 tbsp
Finely Chopped ginger – 2 tbsp
Grated tomato – 1 medium
Whole green chillies – 6-7
Turmeric powder – 1/2 tsp
Kashmiri red chilli powder – 1 tsp
Lemon juice – 2 tbsp
Chicken masala – 1 tbsp
Chaat masala – 1 tsp
Sugar – 1/2 tsp
Salt to taste
Refined oil

METHOD:
Marinade the chicken with salt,half turmeric and lime juice.Keep aside for atleast 2 hours.

Heat oil for frying.Fry the chicken pieces till light brown and keep them in a tissue.
Heat some oil and saute chopped onion till golden brown,then add ginger and garlic saute them together for 5 minutes.Keep the flame on slow.Add tomato,turmeric,red chilli powder,Chicken masala,chat masala,green chillies,salt and sugar cook it for 5-10 minutes or till releases oil on the sides.
Now Add the chicken pieces coat them well in the masala.Add 1/2 cup of water,cover it with a lid and cook it for some minutes till chicken well cooked.
Serve hot.

Jalapeno Chicken

INGREDIENTS:
Jalapeno (Seedless,Cut in slices) – 10
Boneless Chicken breasts – 2 pcs
Cornflour – 2 cups
Flour – 1 cup
Garlic powder – 2 tbsp
Onion flakes – 2 tbsp
Crushed black pepper – 2 tbsp
Baking powder – 1/2 tsp
Lemon juice – 2 tbsp
Egg – 1
Soda – 1 cup
Salt
Refined oil for deep frying

Method:
Cut the chicken into 1/2 inch thick strips.
Marinade the chicken with Lemon juice,salt,1 tsp- black pepper,1 tsp – Garlic powder,1 tsp – Onion flakes and keep aside for 1-2 hours.
Take a bowl add flour,cornflour,salt,egg,baking powder,remaining black pepper,garlic powder,onion flakes and make a thick mixture with the help of soda as required.
Heat oil for deep frying.
Coat the chicken with the mixture nicely and fry it till golden brown and crisp.

Take a wok heat some oil and add Jalapenos, saute the jalapenos for 5-7 minutes on medium flame.Add the fried chicken mix it properly and cook it for 5-10 minutes.
Serve hot.
