Bhuna Teekha Murg

INGREDIENTS:
Chicken(W/B) – 500 gms
Finely Chopped onion – 1 medium
Finely Chopped garlic – 2 tbsp
Finely Chopped ginger – 2 tbsp
Grated tomato – 1 medium
Whole green chillies – 6-7
Turmeric powder – 1/2 tsp
Kashmiri red chilli powder – 1 tsp
Lemon juice – 2 tbsp
Chicken masala – 1 tbsp
Chaat masala – 1 tsp
Sugar – 1/2 tsp
Salt to taste
Refined oil

METHOD:
Marinade the chicken with salt,half turmeric and lime juice.Keep aside for atleast 2 hours.

Heat oil for frying.Fry the chicken pieces till light brown and keep them in a tissue.
Heat some oil and saute chopped onion till golden brown,then add ginger and garlic saute them together for 5 minutes.Keep the flame on slow.Add tomato,turmeric,red chilli powder,Chicken masala,chat masala,green chillies,salt and sugar cook it for 5-10 minutes or till releases oil on the sides.
Now Add the chicken pieces coat them well in the masala.Add 1/2 cup of water,cover it with a lid and cook it for some minutes till chicken well cooked.
Serve hot.

Jalapeno Chicken

INGREDIENTS:
Jalapeno (Seedless,Cut in slices) – 10
Boneless Chicken breasts – 2 pcs
Cornflour – 2 cups
Flour – 1 cup
Garlic powder – 2 tbsp
Onion flakes – 2 tbsp
Crushed black pepper – 2 tbsp
Baking powder – 1/2 tsp
Lemon juice – 2 tbsp
Egg – 1
Soda – 1 cup
Salt
Refined oil for deep frying

Method:
Cut the chicken into 1/2 inch thick strips.
Marinade the chicken with Lemon juice,salt,1 tsp- black pepper,1 tsp – Garlic powder,1 tsp – Onion flakes and keep aside for 1-2 hours.
Take a bowl add flour,cornflour,salt,egg,baking powder,remaining black pepper,garlic powder,onion flakes and make a thick mixture with the help of soda as required.
Heat oil for deep frying.
Coat the chicken with the mixture nicely and fry it till golden brown and crisp.

Take a wok heat some oil and add Jalapenos, saute the jalapenos for 5-7 minutes on medium flame.Add the fried chicken mix it properly and cook it for 5-10 minutes.
Serve hot.

Crispy Chicken Lollypop

INGREDIENTS:
Chicken Lollipop – 5-6
Lemon juice – 2 tbsp
Ginger-Garlic paste – 2 tbsp
Crushed black pepper – 1 tsp
Chilli- Garlic paste – 1 tbsp
Chopped Spring onion – 1 tbsp
Cornflour – 1 cup
Flour – 1/2 cup
Red chilli powder (Kashmiri) – 1 tsp
Salt
Oil

METHOD:
Marinade the lollipops with lemon juice,Crushed black pepper,salt,chilli-garlic paste,ginger- garlic paste and keep aside.

Take a bowl mix flour,cornflour,salt,chilli-garlic paste and make a thick mixture with the help of water.
Heat oil for deep frying.
Coat the lollipops with the flour mixture and fry then on a medium heat till lollipop cooked properly and golden brown.Garnish it with spring onion and foil.
Serve hot with your choice of sauce.

 

 

Crispy Pomfret Fry

INGREDIENTS:
Pomfret -1
Salt to taste
Black peppercorns,crushed to taste
Kashmiri red chili powder- 1 tsp
Red chilli powder-1 tsp
Turmeric powder-1/2 tsp
Lemon juice-2 tbsp
Olive oil
Ginger-Garlic paste-1 tbsp
Garam Masala powder-1/2 tsp
Chaat Masala- 1/2 tsp
Cornflour – 1/2 cup
For capsicum fry-
Capsicum – 1
Onion – 1
Green chillies – 5-6
Sugar
Salt
Lemon Juice – 1 tsp
Chat masala – 1 tsp

METHOD:
Make one centimeter deep slits on either side of the pomfrets.Marinade the fish with all masalas very well and keep aside tor 1 hour. Heat oil for deep frying. Spread the cornflour in a plate and coat the fish with cornflour and fry it.When the underside is golden flip over and cook till the other side is evenly golden.

Take a pan heat 2-3 tbsp of oil fry capsicum, onion,slit green chillies,salt,sugar and chaat masala.Cook it till all cooked.Serve hot with the fried fish.

Tempura Style Chicken

Ingredients:
Boneless Chicken breasts – 2 pcs
Cornflour – 2 cups
Flour – 1 cup
Garlic powder – 2 tbsp
Onion flakes – 2 tbsp
Crushed black pepper – 2 tbsp
Baking powder – 1/2 tsp
Lemon juice – 2 tbsp
Egg – 1
Soda – 1 cup
Salt
Refined oil for deep frying

Crispy Bean Fries

Ingredients:
French beans
All purpose flour – 1/2 cup
Cornflour – 1 cup
Crushed black pepper – 1 tsp
Garlic powder – 1 tsp
Egg – 1
Paprika – 1/2 tsp
Bread Crumbs – 1 cup
Refined oil for deep frying
Salt

Method:
Take a bowl add Flour,cornflour,garlic powder,crushed black pepper,salt,egg,paprika and make a thick mixture with some water.
Cut two sides of french beans and clean it.

Heat refined oil for deep frying.

Dip the beans into the mixture and then coat it with bread crumbs and fry it till golden brown.
Serve hot and crispy with your favourite sauce.

Spicy Cocktail Shrimp

Ingredients:
Shrimp (Deveined and cleaned )- 1 cup
Lemon juice – 2 tbsp
Sriracha / Hot sauce – 3-4 tbsp
Chilli flakes – 1 tsp
Garlic Powder – 1/3 tsp
Salt to taste
Oil

Method:
In a bowl marinate the shrimps with all the ingredients except oil. Keep aside for at least 1/2 an hour.
Take a pan heat 4-5 tbsp oil.Fry all the shrimps till they cooked perfectly.
Serve hot with cocktail sauce or your choice of sauce.

Chicken Stuffed Mushroom

Ingredients:
Button Mushrooms – 10 – 12
Minced Chicken – 250 gm
Finely Chopped onion – 2 tbsp
Chopped Green chilli -1/2 tsp
Minced Ginger & Garlic – 1 tsp
Chopped coriander leaves – 1 tbsp
Black Pepper powder – 1/2 tsp
Salt to taste
Sugar – 1/4 tsp
Olive oil
Italian seasoning – 1/2 tsp (optional)

Method:
Mix Chicken,onion,green chilli,coriander leaves,ginger-garlic,salt,sugar,pepper,
in a bowl and keep aside.
Now take off the stem from all the mushrooms and and clean it well.
Place all the mushrooms in a baking tray sprinkle some oil and salt over it,stuff with the chicken mixture sprinkle some more oil over it..
Preheat your oven at 375 F (around 190 C) and bake the mushrooms 25-30 minutes or till everything well cooked.
Sprinkle some italian seasoning (Optional).
Serve hot.

Chicken Pops

INGREDIENTS:
Ground chicken – 2 cups
Grated onion – 1 small
Minced ginger – 1 tsp
Minced garlic – 1 tsp
Green chilies – 1/2 tsp
Turmeric powder – 1/2 tsp
Kashmiri chili powder – 1/2 tsp
Garam masala powder – 1/3 tsp
chaat masala – 1/3
Tomato paste – 1/2 cup
Salt to taste
Sugar – 1/3 tsp
Bread crumbs – 1 1/2 cup
Maida/all purpose flour – 2 tbsp
water
Refined oil

METHOD:
Take a pan heat 2 tsp oil.Saute onion till golden brown then add green chili,ginger and garlic fry for 5-7 minutes.Now add tomato paste and ground masalas cook for another 5 minutes then put ground chicken mix it well.Cover and cook for 20 minutes or till chicken cooks perfectly.Stir occasionally.Add 1/2 cup bread crumbs mix it well cook for another 5 minutes.Take out on a plate and let it cool.
Take a pan and heat oil half inch of the pan.
In a small bowl make a thick paste of maida and pinch of salt with the help of water.
Make small balls out of the chicken mixture dip in maida mixture then coat it with bread crumbs (you can repeat this process one more time).Then fry it on medium heat till golden brown.Take out on kitchen towel.Serve hot with your choice of sauce or chutney.

Crispy Chicken Wings

INGREDIENTS:
Chicken Wings – 6
Ginger-Garlic paste- 1 tsp
Vinegar/Lemon juice- 1 tbsp
Onion Powder- 1 tsp
Garlic Powder- 1 tsp
Black Pepper powder- 1 tsp
Red Chili Powder – 1 tsp
Salt to taste
Cornflour-1 cup
Refined oil for deep frying

METHOD:
Take a bowl add chicken wings,salt,black pepper,ginger-garlic paste,onion powder,garlic powder,vinegar and marinate it well.Keep aside for 3-4 hours.
Take cornflour on a plate.Season it with 1/4 tsp of salt and 1/3 tsp of pepper.
Heat oil in a pan for deep frying.Now Coat the chicken wings well in cornflour and drop it in hot oil on medium fire one by one.When it become crispy and golden brown drain it on a kitchen towel.Serve it hot with your choice of sauce and fries.
